Mochiko flour is the key ingredient to making many Hawaii recipes like Butter Mochi and Mochiko Chicken. Then add in the dry ingredients, mochiko flour and baking powder. I personally like using the reduced fat coconut milk from Trader Joes (as discussed in another post, call Trader Joes to check about your familys allergens before using). Butter mochi is a staple at almost any party in Hawaii, and its easy to see why. Grease the sides and top of a 12-cup muffin tin well with soft butter. Stir to combine. Cool to room temperature and cut into squares for snacking. Combine the melted butter, coconut milk, whole milk and eggs together in a large bowl.
